Magic coffee cake: A moment of pure pleasure

This cake is a real Magic Moment in Coffee! Its special feature is that it is divided into three layers during baking, making it one of a kind. Thin and fluffy top, creamy middle and compact, darker bottom, this cake is an irresistible mix of flavors and textures. Don’t miss it!

Magic Coffee Cake is a dessert that can be made in many different ways, but we chose the easiest method. Simply mix all the ingredients in a bowl, after separating the yolks from the egg whites and whipping the egg whites to stiff peaks. We will then add the various ingredients, incorporating them with electric whips until we obtain a fairly liquid mixture, which we will pour into a rectangular baking dish. We will bake our cake in the oven for about 80 minutes, but the wait will be rewarded with Espresso Coffee Magic……….

Are you ready? Get comfortable, prepare your tools and one main ingredient: Espresso Coffee!

Surely you have a Coffee Machine at home, whether it is coffee pods or coffee capsules, it does not matter, the important thing is a good blend that gives off a magical flavor for your Magic Cake.

Get your Nespresso Compatible Capsules, Lavazza Espresso Point, Lavazza a Modo Mio, Fior Fiore Coop, Lavazza Firma, Uno System, Nescafé Dolce Gusto, or your coffee pods or whatever you have on hand and brew 250 ml of good espresso.

Keep Ready: 4 Eggs- 180 g sugar- 120 g butter- 120 g flour- 250 ml milk- powdered sugar to decorate

After preparing all the ingredients, get comfortable and start with the procedures: Let’s take the 4 eggs and separate them from the egg whites. We whip the egg whites to stiff peaks not too firmly, and immediately afterwards using electric whips, we start to beat the yolks, add the sugar and continue to mix. Combine the melted butter and incorporate it into the mixture while stirring. Now a little at a time we add the flour, continuing to mix until the mixture is smooth. Pour the brewed coffee from the espresso machine into the bowl and mix it into the mixture using a whisk. Combine the milk, still stirring, add the beaten egg whites and incorporate them into the mixture, stirring with a whisk. Our Magic Cake is Ready to be Baked!

Preheat the oven to 150°C, then prepare a baking dish (an 18 x 25 cm is more than enough) by lining it with baking paper. Slowly pour the mixture over it and then fold the ends of the baking paper outward. Bake and broil for about 80 minutes.

Once it is baked and warm, cut it into squares and then decorate it, if you like, with powdered sugar. Enjoy it while still slightly warm or refrigerate it for a couple of hours and serve it to guests as an end-of-meal dessert and perhaps accompanied by a dollop of whipped cream with a drizzle of hot espresso coffee freshly brewed from your coffee machine.
